The peeps over at Stanford have been working on a project to do just this actually, it's called vectormagic.com . $4.95 a month I think, but it's super cool, works really well and you can download the result in a number of filetypes. I just finished doing the exact same thing to one of my portraits in my illustrator class. Yes it was a pain to trace all the shapes, but I think the outcome is worth it!
